Just finished downloading a bunch of new dieting books. For the most part, they are all similar to the books I’ve read in the past, but I need to reacquaint myself with the ways that work. You know, it’s the same ol’ same ol’….low glycemic, healthy fats, whole grains only, minimally processed foods, no more Splenda (this is going to be tough for me), etc. I’ll share what I rediscover over the next few days. Okay – fighting the urge to not exercise today. Again. I hate hate hate my elliptical machine. I can’t believe I fought so hard to get one. I hate exercising indoors. I want to run, I want to hike, I want to walk. Anything but that awful elliptical machine.

Motivation–I Need Some

Okay, so I am sitting here, watching The Office reruns and mentally coming up with excuses as to why I many not choose to workout at 8:30.  My initial workout time was 6.  Then it was 7:30.  Now it’s 8:30 and I am getting more and more tired and less likely to get up and go. 

I need motivation.  I am going to spend the next 10 minutes coming up with reasons to workout.  I will post my results here. *sets the timer*

 

WHY I SHOULD EXERCISE TONIGHT

  1. Healthmonth.com: I am a member of HealthMonth and I have this very competitive streak in me.  If I don’t stick with my weekly goal of working out 5 times a week, I lose a point.  I don’t like losing.  I like seeing the progress graph go up and up.
  2. I am pretty sure I am only 5 pounds away from the next size down in jeans.  My jeans right now are slightly loose.  The next size is slightly snug.  I’m almost there. 
  3. In an hour, I will be finished and any food cravings I have will be diminished.  (Exercise always helps with that.)  I won’t have to fight against eating the wrong thing for the rest of the night.
  4. We just purchased a $450 elliptical machine.  It needs to be put to use.
  5. My friend has a pass to the YMCA with an indoor pool.  If I want to take advantage of it before winter ends, I better get into shape.
  6. I am actually in a fairly decent weight loss mode right now.  I haven’t stalled, I’m not on a plateau.  This is a great time to take advantage of that.

Okay.  I think I have convinced myself.  I will be working out in 20 minutes.  I will not stop until at least 45 minutes have passed.

Feeling good today, despite the back pain. I plan on working out later and then will use the remaining calories to give myself a nice post-workout snack. I am shooting for a daily Net Calorie intake of 1250 right now.

Sun-Dried Tomato Artichoke Chicken

I made a fabulous dinner for myself today.  I found the recipe on the back of a Knorr package for French Onion Soup.  I usually don’t like using recipes that don’t include the nutritional information such as fat and carb content, but after looking at the ingredients, I figured it really shouldn’t be too high in calories.  In any case, there is still some tweaking I can do the next time I make (which I definitely will.)

INGREDIENTS:

  • 4 bone-in chicken breast halves (I substituted 5 boneless tenderloins)
  • 2 TBSP olive oil  (I think I’ll forgo this ingredient next time – I’ll explain why later.)
  • 1 package of Knorr French Onion recipe mix (I’m sure any 1.4 oz package of dry French onion soup would work.)
  • 2 cloves garlic, finely chopped (I used 2 teaspoons of pre-minced garlic)
  • 1/3 cup chopped, drained sun-dried tomatoes in oil.  (I used the kind without oil.)
  • 1 jar (6 oz.) marinated artichoke hearts, undrained.  (The jar has olive oil in it already and more than enough for the recipe.  I don’t think the extra olive oil above is necessary.  Yes, olive oil is a healthy fat, but don’t add the extra calories if you don’t need them, right?)

DIRECTIONS:

  1. Pre-heat oven to 350 degrees.
  2. Place chicken in large baking or roasting pan.
  3. Combine remaining ingredients and pour over the chicken.
  4. Bake for 30 minutes or until chicken is thoroughly cooked.

As a side-dish I added steamed vegetables with a little bit of balsamic vinegar added to them.
A very very tasty meal, indeed!
