Yes…it’s back. The popcorn is back. It really isn’t my fault. My daughter asked me to make some last night – I can’t deny my daughter. She’s been doing so well on her Candida diet and she needs some tasty foods to enjoy.
I haven’t quite decided how I am going to handle this fresh batch of popcorn in the house. It’s just so yummy. I’m telling all of you right now – get a pot, get some extra light olive oil and pop some popcorn kernels. But, do this at your own risk. It is too good to not eat all day long.
You have been warned.

Okay, so aside from the popcorn battle, I should have a pretty decent day. I feel good and we have lots of healthy things left in the house. Our cars are still snowed in from the big NE blizzard we just had, so I’m hoping to hit the supermarket tomorrow. I haven’t had seafood in a while, so I think I’m definitely going to pick up some scallops and salmon for next week.

Okay, the good news is that I just finished the last of the popcorn, so that won’t be tempting me for the rest of the day. Seriously. I have a popcorn addiction. Have you ever tried natural popcorn popped on the stove with olive oil? It is WAY better than any popcorn you have ever tasted. Ever. I will never touch microwaved popcorn again.
Okay.
Enough about popcorn.
So, today is a regular eating day. Healthy. Calorie counting. You know – the usual. I don’t expect any surprises – unless Orville Redenbacher shows up at my door, of course.

Okay, I seriously have to lay off the popcorn. I don’t care if it’s all-natural and popped on the stove with olive oil…it’s carbs. Lots of carbs and it makes me want to eat more carbs.
“B-b-but it’s sooooo yummy!”
“So are pears.”
“So are apples.”
“So is cottage cheese.”
“Lay off the popcorn!
That’s an order, missy.”

Okay..so, I am having a popcorn problem.
I used up some really good calories today on a lot of popcorn. It’s madness.
In order to fix this mess, I have to workout tonight, which I don’t really want to do because I’m recovering from a muscle injury or I have to have a really really small dinner and skip my favorite healthy bedtime snack.

Blah.
Popcorn is the root of all evil.
“Dieting” evil.
Not the regular kind of evil.
Money (and possibly Nancy Grace) is the root of the other kinds of evil.

Checking In

So, I’ve been tracking my calories on The Daily Plate for the past few weeks.  It’s been such a tremendous help as I continue my attempt to lose those 4 pounds I regained over the holidays.  It’s been about 6 weeks and I only have 1 more pound to lose.  Yay!

What’s refreshing to know is that I finally seem to have an effective plan to keep my weight in check forever.  To lose these 4 pounds, I am basically doing what I did 2 years ago when I lost those 50 pounds.  In fact, I am doing the same exact thing I have been doing to maintain that weight loss during these past 18 months:  I keep track of my calories and eat a healthy low-glycemic diet. The only difference is that I had to lower my calorie intake to lose the weight again.  It also became imperative to actually track my meals online because I found that I was a little forgetful about what I ate during the day and I can’t afford to just guess what the actual calorie amounts were for certain meals.

I am looking forward to being back to my maintenance calorie intake again, though.  I’m definitely going to be a little more careful with the cake and pie consumption during the next holiday season, too.  I really don’t want to have to do this every year.  :)

In any case, I am definitely going to try to come back every few months or so and just spend a week tracking my calories again.  It’s too easy to get lazy or forgetful about how much I am eating throughout the day.  Tracking keeps me honest and accountable.  Oh…and healthy and thin!

As for my exercise…I’m on self-imposed bed rest for the next week or two.  Those crunches the other night really really did something bad to my abdominal muscles.  At least, I think that is what happened.  I started to feel some pain the other day and it has now turned into a ripping/burning feeling when I use my abs.  Even getting into a car hurts like crazy.  Add that pain to my recurring neck and back and pain and this makes for a sad little Jen.  I swear that the mono I had last year has changed my body forever.  I went from healthy and strong to this broken little me.  :(

I’m in physical therapy for the neck and back – I have some kind of spondylosis and muscle spasms…and a compression fracture, too.  I have no idea where the heck that came from…weird!  But, at least that kind of explains the pain.  I am going to see my doctor on Monday for the abdominal pain.  Just want to make sure it’s  not something serious.  You know, like a tumor or something.  I always think “zebras” instead of “horses” when I hear those darned hoofbeats!  :D

Mood: Frustrated

Ack! I think I went a little overboard with the stomach crunches the other night. I now have what I think is an abdominal muscle strain. It hurts when I cough or laugh and it pretty much messes up my exercise schedule for the next few weeks. Blah!

Anyway, my calorie intake is still around 1245 or so while I attempt to lose the last few of my holiday pounds. After that, I’ll go back up to my maintenance number of 1400 or so. I forget what the number is, but it’s close to that. It’ll be nice to have the extra calories again. :)
